Making Apricot Cheesecake

Apricot lovers unite! Finally, there is a Cheescake your desire to find this wonderful fruit. With a touch of Cognac, this cake is sure to please the masses, and maybe even win converts, too!

Preheat oven to 325 Combine crushed biscuits and melted butter in a small bowl. Press the bottom and sides of 9 pan. "Bake for 8 minutes or until golden. Cool.

Let the apricots, reserve 3 tablespoons syrup. Cut material into small pieces. In a large bowl, combine cheese, sugar, vanilla and reserved syrup. Blend until smooth. Add eggs and mix until incorporated. Stir in apricots. Pour into prepared crust.

Place the pan and cook for about 50 minutes or until center appears nearly set when shaken. Fresh on the grill for 15 minutes, then loosen the sides of the crust of the pan. Allow 30 minutes before starting to cool the walls of the pot. Let cool.

Composed in the nectar, brandy and apricot stew. Cook, stirring constantly, until melted fruit spread. Spread the filling over cheesecake. Cover and refrigerate at least 5 hours before serving.
