Apricot Wheat in Beer Recipe

This is a great summer beer that lasted me through the summer of 2010. At the request of my wife, I brewed this up and it's been a staple on those hot summer nights.

American Wheat Beer with Apricot - Extract with Steeped Grains

Ingredients for 5 U.S. gallons (38 L)

6.6 lb (4.5 kg) American wheat malt liquid extract

1.0 lb (0.9 kg) Carapils

1.25 oz (35 g) Cascade whole hops, ~7.8% alpha acid (60 min.)

0.75 oz (35 g) Cascade whole hops, ~7.8% alpha acid (20 min.)

1 Can - Apricot Puree

4oz bottle of apricot flavoring

Wyeast 1010 - American Wheat

Making Apricot Sorbet

Apricot Sorbet

Ripe apricots are some of summer's finest fruits. They're soft, sweet and swollen with coral-hued juice. Don't bake it out in a pie; capture the fresh taste of apricots in homemade apricot sorbet.

This simple sorbet recipe requires only three ingredients and only a minimum of effort. One batch makes a scant quart of sorbet, and that's enough for several small servings. (The recipe can be doubled if your ice cream maker is large enough.)

Scoops of homemade apricot sorbet make a refreshing dessert on an early summer evening. The vibrant color of the sorbet matches the shades of the summer sunset.

Apricot Allure

I have not tried to cook most fruits. Summer fruit, in particular, best eaten fresh from the hands. For example, cooking a ripe peach, juicy seems almost a disservice. Cook, but the goal is perfectly reasonable for an apricot. It is not the first apricots are good they are. But compared to their brothers in the summer, are more powerful, dry and spicy - cooked.

INGREDIENTS:

    * 3 tablespoons olive oil
    * 1 onion, chopped
    * 2 cloves garlic, minced

    * 1 1/2 cups red lentils
    * 5 cups chicken stock
    * 3 roma (plum) tomatoes - peeled, seeded and chopped
    * 1/2 teaspoon ground cumin
    * 1/2 teaspoon dried thyme
    * salt to taste
    * ground black pepper to taste
    * 2 tablespoons fresh lemon juice

DIRECTIONS:

   1. Saute onion, garlic, and apricots in olive oil. Add lentils and stock. Bring to a boil, then reduce heat and simmer 30 minutes.
   2. Stir in tomatoes, and season with cumin, thyme, and salt and pepper to taste. Simmer for 10 minutes.
   3. Stir in lemon juice. Puree 1/2 of the soup in a blender, then return to the pot. Serve.

Can i make apricot ham glaze out of apricot preserves?

Many times I have glazed a ham with peach preserves, so I am sure you could make a fine glaze with apricot. I might not go to this much trouble (usually I just mix the preserves with some brown sugar and mustard), but here is a recipe:

Spoon ham glaze over ham and baste during last 30 minutes of baking time.

Ingredients:

1/2 cup apricot preserves
1/2 cup honey
1 tablespoon cornstarch
3 tablespoons lemon juice
1/4 teaspoon ground cloves

Combine all ham glaze ingredients in a saucepan over medium heat. Heat, stirring constantly, until thickened and bubbly. Spoon ham glaze over ham and baste during last 30 minutes of baking.

1/2 pound fresh curd cheese, such as topfen, quark, or pot cheese
1 large egg
1 tablespoon sugar

Coating:
2 tablespoons unsalted butter
3/4 cup fresh bread crumbs, dried out

1/2 lemon, juiced
Confectioners' sugar, for dusting, if desired

Apricot Yogurt Scones


These scones are of my favorite nibbling variety. They can be eaten with your fingers, but won't get crumbs everywhere. They are sweet, but not too sweet, and have lots of chewy bits of apricot to savor. And yes, rest assured, they are perfect with coffee.

These scones are more tender than traditional, which is the way I typically like them. Think of these palm-sized treats as a cross between a biscuit and a breakfast roll.

The dough used to make them is also wetter than most, so I recommend dropping them directly onto the baking sheet from the mixing bowl rather than trying to pat them into a circle and cut out shapes.

Apricot Spinach Salad Recipe

Apricot Facts and Storage Information

Yield:
One pound of frozen sliced apricots, when thawed, provides approximately 7.3 1/4-cup servings of fruit. A 4-ounce cup provides 1/2 cup of fruit and juice.

Uses:
Serve apricots chilled with syrup or chilled and drained as part of fruit salads or with cottage cheese. Combine with other fresh, canned or frozen fruits for fruit cups or compotes.

Serve drained and heated or at room temperature as a garnish for main dishes. Use as directed in recipes specifying apricots.

Storage:
Store frozen apricots in freezer at 0?F or below, off the floor, and away from walls to allow for circulation of cold air. Frozen apricots may be kept approximately 18 months under proper storage conditions. Temperature changes shorten shelf life and speed deterioration.

Best if Used By
Frozen, sliced apricots are best if used within 18 months.

Apricot Almond Galette


Summer is fruit season.  It seems hard to remember a time when we didn’t have peaches, plums and berries aplenty!  This leads to an overwhelming desire to make pies.  Lots and lots of pies.  The problem is that making pies is a pain in the you-know-what.  You’ve got to make the crust, bake the crust (which means locating your pie weights and praying the crust doesn’t shrink), make the filling, bake it again (this time, praying that it doesn’t overflow and ruin itself).  This rustic galette (aka. A Country Pie) is endlessly adaptable and cuts out at least two of those annoying pie-making steps.

Ripe apricots partner up with homemade almond paste to make this light, crumbly galette.  Tangy, sweet apricots laying over a bed of homemade almond paste wrapped up in a light whole wheat crust.  Served warm, the oozey fruit and nutty crust are just begging to be topped with a scoop of vanilla ice cream or a dollop of whipped cream.  A perfect way to put all that summer fruit to use without all the fuss of a pie!

I ate my first memorable apricot in 1986. I was seven years old and my sister was in her final year of nursery school. The normal order of things in those days was that my mom would pick Raina up at school first and then together, they’d come to get me. For whatever reason, that day the pick-up order was reserved. I delighted in that mostly because it meant I could ride in the front seat without a battle.

When we walked into the main area of Wee Kirk (is it strange that 25 years later, I still remember the name of my younger sister’s pre-school?), sitting on a high table was a giant basket of apricots with a sign that simply said, “Help yourself.” A parent had brought it in, an attempt to cope with the amount of fruit that a tree in Southern California can produce.

I took one, slurped it down and then quickly pocketed two more, loving the way the sweet and tart played together. My mom stopped me before I could well and truly ruin my dinner, but she was too late to keep me from falling under the spell of the apricot.

Apricot chicken

Try this addictive combination of perfectly cooked chicken and sweet apricots for your next dinner.

Ingredients (serves 4)

    * 1/2 cup plain flour
    * 1kg (8 pieces) skinless chicken cutlets or drumsticks, trimmed
    * 2 tablespoons olive oil
    * 1 large brown onion, peeled, cut into thin wedges
    * 2 garlic cloves, crushed
    * 1 tablespoon Moroccan seasoning blend
    * 405ml can apricot nectar
    * 1/2 cup Angas Park Large Dried Apricots
    * 1 cup couscous
    * 1/3 cup flat-leaf parsley leaves, chopped

Making Apricot Wine

Add fresh apricots for your homemade wine.

Rent or buy equipment for the storage of wine.

Remove stones, cut, ground, and 3-6 pounds of ripe fruit. More fruit is a strong flavor of wine.

Place in a plastic bucket.

Add 1 crushed Campden tablet 1 teaspoon of tea. Pectic enzyme and 1 liter of water.

Mix well and let sit for a week. Cover with a cloth and stir daily.

Add about 2 kg. eating sugar 20-21 degrees Brix. (See "Control of the fermentation of the juice of a Brix value" on eHow instructions on how to measure the Brix and sugar content.)

Add c. Tea. Yeast. Mix well.

Transfer cups of juice. Fill in the 3.2

The yeast in warm water to hydrate stand for 10 minutes, then the juice.

Bring to a block of fermentation.

When the sediment is deposited, after about 5-6 days, "rack", or distracted by light wine by the glass. To fill the bottle. (See "Wine Rack" for instructions.)

Accumulate in sediments tension. You may have to increase three or four times.

Leave for three or four months, until the wine is clear.

Maple Apricot Granola

Yield: Makes about 10 cups
Active time: 20 min Start to finish: 1 hr

Ingredients

    * 1/4 cup flaxseeds (1 1/4 oz)
    * 6 cups old-fashioned oats (18 oz)
    * 2 cups sliced almonds (8 oz)
    * 1 cup hulled (green) pumpkin seeds (not roasted; 5 oz)
    * 1/2 cup hulled sunflower seeds (not roasted; 2 1/2 oz)
    * 1 teaspoon salt
    * 3/4 cup vegetable oil
    * 3/4 cup pure maple syrup
    * 1/3 cup crystallized ginger (2 1/2 oz; optional), finely chopped
    * 2 cups dried apricots (11 oz), finely chopped

Accompaniments: plain yogurt or milk; honey or maple syrup
Special equipment: an electric coffee/spice grinder

Make Homemade Apricot Nut Bread
